Easy Chicken Fried Rice: A Quick and Easy Weeknight Meal

Ingredients:

◦ 3 cups cooked long-grain white rice, preferably day-old

◦ 1/2 pound boneless, skinless chicken breast, cooked and diced

◦ 1 tablespoon vegetable oil

◦ 2 tablespoons garlic paste

◦ 1 cup chopped mixed vegetables (such as carrots, peas, and broccoli)

◦ 2 tablespoons soy sauce

◦ 2 tablespoons apple cider vinegar

◦ 1 teaspoon sesame oil

◦ 1/4 cup chopped green onions

◦ 1 bunch chopped green chilies

◦ Salt and pepper to taste

Instructions:

1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the garlic paste and cook until fragrant, about 30 seconds.

2. Add the cooked chicken and mixed vegetables and cook until heated through, about 2 minutes.

3. Stir in the rice, soy sauce, apple cider vinegar, and sesame oil. Cook, stirring constantly, until the rice is heated through and slightly crispy, about 5 minutes.

4. Stir in the green onions and green chilies. Season with salt and pepper to taste.
