Bread pudding (also called Shahi tukde in India)

Ingredients:

  • 1 loaf of day-old bread, sliced and cubed
  • 2 cups of whole milk
  • 1/2 cup of sweetened condensed milk
  • 1/2 cup of sugar
  • 1/4 cup of ghee (clarified butter)
  • 1/4 cup of raisins
  • 1/4 cup of chopped cashews
  • 1/4 cup of chopped almonds
  • 1 teaspoon of ground cardamom

Instructions:

  1. In a large pot or deep pan, combine the whole milk, sweetened condensed milk, and sugar over medium heat.
  2. Stir until the sugar dissolves and the mixture starts to simmer.
  3. Add the cubed bread to the pot and stir until the bread is coated and starts to absorb the liquid.
  4. In a separate pan, heat the ghee and fry the raisins, cashews, and almonds until they turn golden brown.
  5. Add the fried nuts, raisins, and ground cardamom to the bread mixture and stir to distribute evenly.
  6. Cover the pot with a lid and let the bread pudding simmer on low heat for 10-15 minutes, stirring occasionally to prevent sticking.
  7. Remove the lid and let the pudding cook for another 5-10 minutes to thicken.
  8. Once the bread pudding is cooked and has a thick consistency, remove it from heat.
  9. Let the bread pudding cool for a few minutes before serving warm.
