Ingredients:
- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup extra-virgin olive oil
- 2 tbsp. Bragg’s Apple Cider Vinegar
- Salt and pepper to taste
Instructions:
- Cook quinoa in 2 cups of water/broth until tender and liquid absorbed.
- In a large bowl, combine cooked quinoa, diced red bell pepper, cucumber, red onion, parsley, mint, and feta cheese.
- In a small bowl, whisk olive oil, Bragg’s Apple Cider Vinegar, salt, and pepper. Pour over quinoa salad and toss.
- Taste and adjust seasoning if needed.
