Quinoa recipe

Get ready to nourish your body and excite your taste buds with this protein-packed and versatile superfood, quinoa.

Ingredients:

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp. Bragg’s Apple Cider Vinegar
  • Salt and pepper to taste

Instructions:

  1. Cook quinoa in 2 cups of water/broth until tender and liquid absorbed.
  2. In a large bowl, combine cooked quinoa, diced red bell pepper, cucumber, red onion, parsley, mint, and feta cheese.
  3. In a small bowl, whisk olive oil, Bragg’s Apple Cider Vinegar, salt, and pepper. Pour over quinoa salad and toss.
  4. Taste and adjust seasoning if needed.
  5. Serve or refrigerate until ready to serve.
