- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 onion, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 2 cups chicken or beef broth
- 1 cup hummus
- 1/2 red onion, thinly sliced
- 1/4 cup parsley leaves
- 1 lemon, juiced
- 1 tbsp olive oil
Instructions:
- Preheat the oven to 350°F (175°C).

- Add the garlic and onion to the Dutch oven and cook until softened, about 5 minutes.
- Add the cumin, coriander, and cinnamon and cook for 1-2 minutes, or until fragrant.
- Return the lamb shanks to the Dutch oven and pour in enough broth to cover them. Bring to a simmer.
- Cover the Dutch oven and transfer it to the oven. Cook for 2-3 hours, or until the lamb is tender and falls off the bone.
- In a small bowl, whisk together the lemon juice and olive oil. Toss the sliced red onion and parsley leaves with the dressing.
- To serve, spoon the hummus onto a plate and top with a lamb shank. Serve with the onion salad on the side.
