Burrito Bowl Recipe

Ingredients:

  • 1 cup brown rice
  • 2 cups water
  • 1 can red beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup corn kernels
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 2 salmon fillets, skin removed
  • 1 lime, cut into wedges
  • Fresh cilantro, chopped
  • Salsa, sour cream, and avocado (optional)

Instructions:

  1. Cook the brown rice according to package instructions.
  2. Preheat the air fryer to 375°F (190°C).
  3. Toss the corn, bell peppers, olive oil, chili powder, cumin, salt, and pepper together. Air fry for 10-12 minutes.
  4. Season the salmon with salt and pepper. Air fry for 6-8 minutes.
